cheap, easy store cupboard vegan ‘mac and cheese’

so, i’m not gonna lie, one of my biggest stumbling blocks in eating a more plant based diet is cheese (well, chocolate too but thats a whole other post!) I mean, who wouldnt miss the savoury, salty, cheesy goodness of, well… cheese.

One of the first things i started doing throughout last Veganuary was experimenting with different mac n cheese recipes, it’s one of my lazy go to meals for the kids I. But for a really long time i just couldnt get it right. All the recipes i found either ending up with me spending hours and hours in the kitchen grinding and soaking cashew nuts and finding Agar Agar ( thats weird seaweed flake thing if you were like me and didnt know!)

Anyway without further ado, here is my recipe for a bowl of non-cheesy goodness. I should probably tell you im not a measure it out type of chef, im a stick it all in the bowl and add to taste type of person.



one onion

two potatos

1 carrot

nutritional yeast

lemon juice

onion and garlic powder

nut milk

salt and pepper to taste.


start by beginning to cook your pasta on the hob like normal. this recipe feeds 2 adults and 2 kids, so yeah, cook enough pasta for that.

peel the carrots and potatos and get them boiling in the pan with some salt.

grate your onion.

when the potatos and carrots have boiled, add the grated onion and get mashing! add a teaspoon of onion and a teaspoon of garlic powder along with 2 tablespoons of lemon juice and 2 table spoons of nutritional yeast. 

this is where i just just go it by eye, add the nut milk, ( i use soya but any unsweetened will do) so that when blended, it will make a sauce like consistency. then get blending. I use a hand mixer type tool but you could pop it in the blender no problem. 

This is the stage where i may start tasting the recipe and adding more flavour as i see fit, maybe some more nutritional yeast, a little salt and papper, whatever suits you.

Once the pasta is drained stir in the cheese sauce mixture and serve

I you have any in the fridge, you could sprinkle some cheese alternative on, ive just remembered i also usually have some paprika on hand to add a teaspoon of to the mixture and a little on top to serve, but this step is totally optional!
